Vol Au Vent
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Roll out the puff pastry to ½ inch thick.
Turn a pie plate upside down on the pastry and press down to mark the shape.
Cut out the shape with a sharp knife.
Add two or three thicker rims around the edge like a pie.
Place on a baking paper in a large pan.
Bake in a hot oven at 400°F (200°C) for 45 minutes.
Fill with cream, meats, mushrooms, or oysters, or serve as a dessert with stewed fruits and whipped cream.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
