Delicious Lemon Pie

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Preheat the oven to 350°F (175°C).

  2. Beat 2 eggs and 2 egg yolks in a bowl.

  3. Add 1 cup of sugar, 3 tablespoons of sweet milk, 1 tablespoon of melted butter, the grated rind, and juice of 1 lemon; mix well.

  4. Pour the mixture into a pie crust-lined plate and bake until it puffs and a knife comes out clean.

Make the meringue and finish

  1. For the meringue, beat 3 egg whites until stiff.

  2. Gradually beat in 4 tablespoons of powdered sugar, then fold in 3 more tablespoons of powdered sugar.

  3. Spread the meringue over the pie and bake for about 10 minutes until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard filling and give it structure as they bake.
Egg whites
Whipped into a stiff foam that forms the airy meringue topping.
Sugar
Sweetens the filling and stabilises the whipped egg white foam.
Lemon juice
Adds acidity that gives the filling its tart flavour and helps it set.
Butter
Adds richness and fat for a tender, smooth filling.

The step that matters

Beating the meringue until stiff. Egg whites must be whipped until they hold stiff peaks before sugar is added, or the meringue will be runny and may weep. Adding powdered sugar gradually keeps the foam stable as it bakes to golden.
