What each ingredient does

All-purpose flour
Forms the dough structure that holds the apples while steaming.
Baking powder
Releases gas in the dough, giving it a light, risen texture.
Butter
Adds fat that makes the dough tender and rich in flavor.
Milk
Hydrates the flour so the dough comes together and stays moist.
Sour apples
Provide the main fruit filling, with tartness balancing the sweetness.
Sugar
Sweetens the apples and helps them soften and turn syrupy as they cook.

The step that matters

Press the ends tightly together. If the seams are not sealed, steam and apple juices can escape and the filling may leak out, leaving the dumpling dry and the dough underdone at the join.
