What each ingredient does

Cooking apples
Cook down into a tender pulp that gives the charlotte its body and apple flavour.
Egg white
Whipped to a stiff foam, it lightens the mixture and gives it an airy, set texture.
Gelatin
Sets the mousse-like mixture so it holds its shape when unmolded.
Heavy cream
Whipped and folded in, it adds richness and a light, creamy texture.
Sugar
Sweetens the apple mixture and, cooked to thread stage, forms the syrup that stabilises the foam.

The step that matters

Slowly pour the hot sugar syrup onto the egg white. Pouring the syrup in a thin, steady stream while stirring cooks the egg white gently and lets it form a stable, glossy foam. Pouring too fast can deflate the whites or leave them lumpy.

Swap the lemon

How well each one fits the dish's main ingredients (apple, cinnamon, sugar, egg, sherry, wine, gelatin):
