What each ingredient does

Apples
Provide the main body and flavour, breaking down into a smooth puree when cooked.
Egg white
Adds lightness and a fluffier, airier texture to the frozen mixture.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Sugar
Sweetens the sherbet and softens its texture as it freezes.

The step that matters

Freezing with the egg white. Beaten egg white must be folded in as the mixture freezes so it stays evenly distributed. Adding it cold or all at once can leave it separated and reduce the light, airy texture.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (apple, cinnamon, nutmeg, lemon, sugar, egg):

  1. Cardamomfits better
  2. Clovefits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against apple, cinnamon, nutmeg, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
