What each ingredient does

Cucumbers
Form the pickles themselves, becoming crisp and firm as they cure in brine and vinegar.
Coarse sea salt
Draws water out of the cucumbers and seasons them during the brine soak.
Vinegar
Provides the sour acidity that preserves the cucumbers and gives the pickles their tang.
Alum
Helps the cucumbers stay firm and crisp during long pickling.
Horseradish root
Adds a sharp, pungent flavour that infuses the cucumbers as they pickle.

The step that matters

Pour off the vinegar on the third day, reheat it, and return it to the cucumbers. Reheating the vinegar and pouring it back over the cucumbers keeps the pickling liquid hot enough to help flavours penetrate and reduce spoilage risk during the long cure.

Swap the onion
