Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the eggs for 20 minutes.

  2. Prepare a pint of cream sauce.

Assemble

  1. Place the toast on a hot dish and add a layer of sauce on each slice.

  2. Cut the egg whites into thin strips and place them on the toast.

  3. Rub the yolks through a sieve onto the toast.

  4. Repeat the layering with sauce, egg whites, and yolks.

Bake and serve

  1. Place the dish in a 400°F (200°C) oven for about 3 minutes.

  2. Garnish with parsley and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites give a light, firm texture, and the yolks add richness and a creamy finish.
Cream
Forms the smooth sauce that adds moisture and richness between the layers.
Toast
Provides a sturdy base that holds the sauce and egg layers.

The step that matters

Place the dish in the oven. The eggs are already cooked, so the oven only needs to warm the dish through. Heating too long can dry the toast, and overheating cream sauce can cause it to separate or scorch.

Swap the parsley

How well each one fits the dish's main ingredients (egg, cream):

  1. Nutmegfits better
  2. Tarragonfits better
  3. White pepperfits better
  4. Parsleythe original

Fit is the average pairing score against egg, cream. Candidates are from the same food group and used in at least 100 recipes.
