Corn Mush

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mush

  1. Bring 4 quarts of water to a boil in a kettle.

  2. Add coarse sea salt to taste.

  3. Slowly stir in 1½ quarts of cornmeal to prevent lumps, increasing the speed as it thickens.

  4. Once thick enough to stir with one hand, transfer to an oven‑safe pan or leave in the kettle.

Bake and cool

  1. Bake in a 350°F (175°C) oven for 1 hour until thoroughly cooked.

  2. Let cool before frying.

What each ingredient does

Cornmeal
Its starch thickens with hot water and sets into a firm, sliceable mass as it cools.
Water
Hydrates the cornmeal so its starch can gelatinize and form the mush's body.

The step that matters

Stirring in the cornmeal slowly. Dumping cornmeal into boiling water clumps it, because the outer grains hydrate and seal before the inside wets. Adding it slowly while stirring disperses the grains so the mush cooks smooth.
