Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Common Custard
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
In a bowl, combine the milk, sugar, peach-water (or lemon extract or vanilla), and coarse sea salt.
Rub butter over the bottom and sides of a baking dish or tin basin.
Bake
Pour the custard mixture into the prepared dish and grate a little nutmeg on top.
Bake for about 45 minutes, or until a teaspoon handle inserted in the center comes out clean.
Alternatively, butter small cups and place them in a shallow pan of hot water.
Fill the cups with the custard mixture and keep the water boiling until done.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Milk
- Forms the liquid base that sets into the custard.
- Eggs (in the method)
- Not listed in this record; omitted.
The step that matters
Bake until the center is just set. Custard sets as its proteins coagulate with heat. Overbaking forces the mixture to curdle and turn grainy, while underbaking leaves it runny. Checking the center with a utensil tells you when it is set.
Swap the nutmeg
How well each one fits the dish's main ingredients (milk, sugar, peach, butter):
- Cinnamonfits better
- Nutmegthe original
- Gingerfits about as well
- Clovefits less well
Fit is the average pairing score against milk, sugar, peach, butter. Candidates are from the same food group and used in at least 100 recipes.
