Why it works: Nutmeg and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Apple Meringue Pie

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Pare, slice, and stew the apples until soft.

  2. Sweeten to taste and mash the apples.

  3. If desired, stew lemon peel with the apples for added flavor.

  4. Fill the pie crust with the apple mixture and bake until done.

Make and bake the meringue

  1. In a bowl, whip the egg whites until frothy.

  2. Gradually add the powdered sugar and vanilla extract, beating until the meringue holds stiff peaks.

  3. Spread the meringue over the apple filling, about ¾ inch thick.

  4. Return the pie to a 400°F (200°C) oven until the meringue is set.

  5. Let the pie cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe, tart apples
Provide the main filling, with tartness that balances the sweet meringue.
3 egg whites
Whip into a foam that sets into the light, airy meringue topping.
Powdered sugar
Sweetens the meringue and helps stabilize the whipped egg white foam.

The step that matters

Beating the meringue to stiff peaks. Egg whites must be whipped until they hold stiff peaks before sugar is added gradually. Underbeaten whites stay runny and may weep or slump in the oven, while overbeaten whites turn dry and grainy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (apple, nutmeg, egg, sugar, vanilla):

  1. Figfits better
  2. Pearfits better
  3. Peachfits better
  4. Lemonthe original

Fit is the average pairing score against apple, nutmeg, egg, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
