To Preserve Peaches

Ingredients

Directions

Prepare the peaches

  1. Cut peaches in halves and remove the stones.

  2. Peel the peaches neatly.

Make the syrup

  1. For each pound of sugar, add 1 teacup of water and stir until dissolved.

  2. Heat the syrup over moderate heat until boiling hot.

Cook and set

  1. Add the peaches to the syrup and boil gently until they are clear and uniform in color.

  2. Carefully turn the peaches with a skimmer several times during cooking.

  3. Optionally, add some peach stone kernels while boiling.

  4. Once clear, remove each peach half with a spoon and spread them on flat dishes to cool.

  5. Boil the syrup until it thickens, then pour it into a large pitcher to cool and settle.

  6. Once the peaches are cold, place them in jars and pour the syrup over them, leaving any sediment behind or straining the syrup.

  7. Let the jars remain open overnight, then cover.

What each ingredient does

Peaches
Provide the fruit, which turns clear and firm as it cooks in the syrup.
White sugar
Sweetens and thickens the syrup, helping preserve the fruit.

The step that matters

Boiling the peaches gently until clear. Boiling too hard can break the fruit apart and cloud the syrup. Gentle heat lets sugar slowly replace water in the peach tissue, so the fruit becomes clear and holds its shape.
