Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Preserve Citron

Ingredients

Directions

Prepare

  1. Pare the citrons and cut them into 1.5-inch thick slices, then into strips.

  2. Remove all seeds with a small knife.

  3. Weigh the citron and combine with an equal weight of white sugar.

Make the syrup

  1. In a pot, combine 1 pint of water and the sugar to make a syrup.

  2. Simmer the syrup gently for 20 minutes.

Cook the citron

  1. Add the citron and boil for 1 hour or until tender.

  2. Before removing from heat, add 2 thinly sliced lemons (seeds removed) and 2 ounces of root ginger.

  3. Do not boil long after adding lemon and ginger, and do not stir while boiling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
The main fruit; it softens in the syrup until tender and translucent.
White sugar
Sweetens the fruit and, in a thick syrup, helps preserve it.
Lemons
Add acidity and a bright, fresh aroma to the syrup.
Root ginger
Adds a warm, spicy aroma to the preserve.

The step that matters

Stop cooking soon after adding the lemon and ginger. Prolonged boiling drives off the delicate aroma of fresh lemon and ginger and can break down the softened peel into mush. Stirring while boiling can also break the citron pieces apart, so the syrup should be left undisturbed.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
