Strawberry Sherbet

Ingredients

Directions

Prepare the infusion

  1. Mash the strawberries in a mortar and add 1 quart of water.

  2. Pour the mixture into a basin, add the sliced lemon and orange-flower water, and let it sit for 2–3 hours.

Make the sherbet

  1. In another basin, place 18 ounces of sugar and cover it with a cloth.

  2. Pour the strawberry juice through the cloth, gathering and squeezing to extract as much juice as possible.

  3. Once the sugar is dissolved, strain the mixture again and place it on ice until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberry juice
Provides the main fruit flavour and red colour of the sherbet.
Sugar
Sweetens the sherbet and helps give it a smooth, scoopable texture.
Lemon
Adds acidity that brightens the strawberry flavour.

The step that matters

Dissolving the sugar before straining. Sugar must fully dissolve in the juice so the sherbet is smooth and not gritty. Undissolved crystals can remain and make the texture coarse once chilled.

Swap the strawberry

How well each one fits the dish's main ingredients (lemon, orange, sugar):

  1. Limefits better
  2. Vanillafits better
  3. Blueberryfits better
  4. Strawberrythe original

Fit is the average pairing score against lemon, orange, sugar. Candidates are from the same food group and used in at least 100 recipes.
