Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Sugar
Sweetens the jelly and helps give it body.
Strawberries
Provide the main flavour and fruit body of the jelly.
Lemon juice
Adds acidity that brightens the sweetness and flavour.
Red currant juice
Adds tart fruit flavour and extra acidity.

The step that matters

Let the isinglass cool before mixing it with the syrup. If the clarified isinglass is still very hot, it can thin the mixture and weaken setting, while if it is too cold it may set in lumps. Mixing when it is nearly cold lets it distribute evenly so the jelly sets firm and clear.

Swap the red currant

How well each one fits the dish's main ingredients (sugar, lemon):

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
