Cream Oysters in the Shell

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the cream sauce

  1. Combine water, milk, cream, and baking soda in a saucepan. Place the saucepan in a pot of hot water and bring to a boil.

  2. Stir in butter, salt, and pepper.

  3. Remove from heat and add cornstarch mixed with cold milk.

Fill and bake

  1. Prepare shells by placing an oyster in each shell.

  2. Arrange the filled shells in a large baking pan.

  3. Beat the cream mixture again and fill the shells with it.

  4. Bake for 5 minutes at 400°F (200°C) and serve in the shells.

What each ingredient does

Cornstarch
Thickens the cream mixture into a smooth, spoonable sauce as it cools.
Cream
Adds richness and body, giving the sauce a smooth, silky texture.
Milk
Forms the liquid base of the sauce and adds mild sweetness and body.
Butter
Adds fat for a rich flavour and smooth mouthfeel in the sauce.

The step that matters

Adding the cornstarch mixture off the heat. Cornstarch thickens only when heated and then cooled, and adding it off the heat prevents lumps from forming in the sauce. Stirring it in smoothly while the mixture is still warm gives an even, creamy texture.
