Why it works: Ham and butter are a kitchen classic. They rank in the top 16% of all ingredient pairs, and cooks put them together in 5,475 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Bell peppers
- Hold the egg in a edible cup and soften as they cook.
- Eggs
- Set when baked to form the soft filling that is the centre of the dish.
- Buttered breadcrumbs
- Soak up moisture and add a light, toasted texture around the egg.
- Grated ham
- Adds savoury, salty flavour to the filling.
The step that matters
Bake until the egg white is set. Egg white sets at around 60 to 70°C while the yolk stays runny, so pulling it too early leaves the white watery and pulling it too late makes the yolk firm and rubbery.
