Cauliflower and Cheese

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the vegetables

  1. Boil the cauliflower in salted water until tender, then drain and let it stand in a sieve.

  2. Wash the potatoes and place them around the cauliflower in a baking dish.

Make the sauce

  1. In a saucepan, melt 4 tablespoons of butter over medium heat, then stir in 2 tablespoons of flour and cook until browned.

  2. Gradually add ½ cup of cream and ½ cup of milk, stirring until thick and smooth.

  3. Season the sauce well, then stir in 2 tablespoons of grated Swiss cheese and bring to a boil.

Bake and serve

  1. Pour the sauce over the cauliflower and potatoes, then bake at 400°F (200°C) for 10 minutes.

What each ingredient does

Cauliflower
Forms the main body of the dish and becomes tender when boiled.
Butter
Provides fat and richness, and carries the flour to form the sauce base.
All-purpose flour
Thickens the butter and cream sauce as its starch swells with heat.
Heavy cream
Adds moisture and richness, giving the sauce a smooth, silky body.
Milk
Thins the sauce and adds moisture while keeping it smooth.
Swiss cheese
Adds savory flavor and melts into the sauce for a creamy, cheesy texture.

The step that matters

Cooking the flour in the butter. The flour must be cooked in the melted butter to remove its raw taste and to form a roux. Adding liquid too quickly, or before the roux is ready, leads to lumps. Stirring while adding cream and milk keeps the sauce smooth and thick.

Swap the cauliflower

How well each one fits the dish's main ingredients (potato, butter, flour, cream, milk, swiss cheese):

  1. Chivefits better
  2. Asparagusfits better
  3. Onionfits better
