Chicken Diplomate

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Combine the chicken breast, mushrooms, and truffles to make a farcie mixture.

  2. Prepare the chicken legs as ballotine by removing the bone from the second joint and replacing it with quenelle forcemeat.

Assemble and bake

  1. Reconstruct the chicken by applying the farcie to the breast and using the ballotine for the legs.

  2. Spread bread crumbs over the entire chicken.

  3. Bake in a 400°F (200°C) oven until hot and lightly browned.

Serve

  1. Serve with peas, flageolets, or jardinière.

What each ingredient does

Chicken breast
Forms the lean meat of the farcie stuffing, giving the dish its main body and bulk.
Mushrooms
Add moisture and savory, earthy flavor to the farcie mixture.
Truffles
Contribute a strong aroma that gives the stuffing its distinctive flavor.
Quenelle forcemeat
Fills the boned chicken legs, providing a smooth, tender texture that holds the ballotine together.
Bread crumbs
Form a crisp, lightly browned crust over the outside of the chicken during baking.

The step that matters

Reconstruct the chicken. The farcie and ballotine must be packed firmly enough to hold their shape, but not so tightly that the forcemeat becomes dense. Even filling lets the stuffing cook through evenly with the surrounding meat.
