What each ingredient does

Bread
Forms the structure of the pudding and soaks up the custard as it bakes.
Milk
Provides the liquid that moistens the bread and forms the custard base.
Eggs
Set when baked, binding the bread and milk into a firm, sliceable custard.
Sugar
Adds sweetness to the custard.
Currants
Add pockets of concentrated sweetness and fruit flavour throughout the pudding.

The step that matters

Bake until set. Eggs set as they heat, so underbaking leaves the custard runny, while overbaking makes it curdled and rubbery. Baking only until the centre just firms gives a smooth, tender pudding.

Swap the currant

How well each one fits the dish's main ingredients (bread, milk, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Datesfits better
  4. Currantthe original

Fit is the average pairing score against bread, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
