What each ingredient does

Rhubarb
Provides the tart flavor and the fruit body of the jelly.
Gelatin
Sets the liquid into a firm jelly and gives the cream its body.
Sugar
Sweetens the rhubarb and balances its natural tartness.
Banana pulp
Adds smooth body and banana flavor to the cream layer.
Cream
Adds richness and a light, airy texture when folded in.

The step that matters

Pour the rhubarb jelly into the mold gradually. Gelatin sets as it cools, so a slow, steady pour helps the layers combine without the gelatin setting unevenly or trapping air. Keep the gelatin warm but not boiling, since excessive heat weakens its setting power.

Swap the banana

How well each one fits the dish's main ingredients (rhubarb, sugar, gelatin, lemon, orange, cream, ginger):
