Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften and sweeten as they simmer, forming the flavour base of the soup.
Butter
Carries the onions' cooking and adds richness and flavour from the start.
Flour
Thickens the onion mixture so it lends body to the milk-based soup.
Milk
Forms the liquid base of the soup.
Egg yolks
Enrich and thicken the soup as they gently cook with the cream.
Cream
Adds richness and smoothness to the finished soup.

The step that matters

Adding the egg yolks. Egg yolks thicken by gentle heat. If the soup boils after they go in, they can scramble and curdle, so keep it below a boil while stirring constantly.
