Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Lobster Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. Mash the small claws and spawn in a dish until smooth.

  2. Add gravy or broth and bread crumbs.

  3. Heat the mixture until boiling.

  4. Strain the mixture to a creamy thickness.

  5. Mix half of the strained mixture with the lobster.

Make the filling

  1. Add butter, pepper, salt, and lemon juice to the lobster.

  2. Warm the mixture until butter melts.

  3. Cool the mixture.

Bake and serve

  1. Line a patty pan with puff pastry.

  2. Fill the pastry with the lobster mixture.

  3. Cover with more pastry.

  4. Bake at 400°F (200°C) for 45 minutes.

  5. Cut the top pastry.

  6. Warm the reserved sauce with a little butter.

  7. Pour the sauce over the patty.

  8. Garnish with lemon juice.

What each ingredient does

Lobster
Provides the main meat and flavor of the filling.
Small claws and spawn
Mashed and strained to build a rich, creamy sauce base.
Bread crumbs
Thicken the sauce mixture so it holds a creamy consistency.
Butter
Adds richness and fat, giving the filling a smoother mouthfeel.
Puff pastry
Forms a flaky, layered crust that bakes to a golden brown.

The step that matters

Cool the mixture before filling the pastry. A warm filling softens the raw puff pastry and melts its layered butter, so the crust may not rise and flake properly in the oven.
