Ingredients

Directions

Prepare the crust

  1. Butter the inside of a deep pie plate and line it with puff pastry or pie crust.

  2. Prepare another sheet of pastry for the lid.

  3. Place a clean towel in the dish to support the lid.

  4. Set the dish in the oven and bake the pastry until done.

  5. Remove the lid and take out the towel.

Cook the oysters

  1. Pick off any shell bits from the oysters and drain the liquor into a pan.

  2. In a stewpan, add the oysters with just enough liquor to prevent burning.

  3. Season with pepper, coarse sea salt, and butter.

  4. Add a little sweet cream or milk and 2 finely rolled crackers.

  5. Simmer the oysters gently, avoiding boiling.

Assemble and serve

  1. Remove the upper crust of pastry.

What each ingredient does

Oysters
Form the main filling and provide the savoury, briny flavour of the pie.
Butter
Adds richness and fat that gives the filling a smooth, rounded mouthfeel.
Sweet cream or milk
Adds moisture and creaminess, turning the oysters into a rich gravy.
2 crackers
Crumbled into the filling, they thicken the liquid and help bind the gravy.
Puff pastry or common pie crust
Forms the baked case and lid that hold the filling in the dish.

The step that matters

Simmer the oysters gently, avoiding boiling. Oysters toughen and shrink when overheated, so they should simmer gently only until their edges curl and the gravy thickens.
