What each ingredient does

Cauliflower
Provides the firm, crisp vegetable body that holds its texture through pickling.
White sugar
Balances the sharp acidity of the vinegar with sweetness.
Hot vinegar
Acidifies the brine, preserving the cauliflower and giving it its tang.
White mustard seeds
Release pungent flavour into the vinegar, adding aroma and bite.
French mustard
Adds sharp mustard flavour and helps emulsify the pickling liquid.

The step that matters

Covering the cauliflower fully with vinegar. Any pieces left exposed to air can spoil or discolour in storage, because the acidic brine is what keeps the vegetable preserved. Make sure every piece is submerged before sealing.
