Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the eggplant in half and scoop out the insides.

  2. Place the insides in a saucepan with a little water and boil until soft.

  3. Drain the water and add breadcrumbs, butter, minced onion, salt, and pepper.

Stuff and bake

  1. Stuff each half of the eggplant with the mixture.

  2. Top each half with a small lump of butter and bake at 350°F (175°C) for 15 minutes.

Breadcrumbs
Absorb moisture and bind the filling so it holds its shape when stuffed.
Butter
Adds richness and moisture to the filling and helps the top brown in the oven.
Minced ham
Adds savory, salty flavor to the filling.
