Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify roots
Form the main body of the dish, becoming tender during slow stewing.
Butter
Adds richness and a silky mouthfeel to the stewed liquid.
Sweet cream
Adds richness and body, mellowing the liquid into a creamy sauce.
Flour
Thickens the liquid into a paste-like sauce as it heats.

The step that matters

Stirring in the flour. Flour clumps if stirred into hot liquid without first being mixed smooth, leaving lumps in the sauce. Whisking it into the cream or a little liquid first helps it thicken evenly.
