Lemon Pudding, Cold
Ingredients
Directions
Make the custard
In a small bowl, wet the cornstarch with some of the milk.
In a saucepan, bring the remaining milk to a boil, then stir in the cornstarch mixture, stirring constantly for 5 minutes.
Remove from heat, stir in the butter, and let it cool.
Beat the egg yolks and sugar together, then mix them into the cooled milk and cornstarch mixture.
Gradually stir in the lemon juice and grated rind until smooth.
Chill and serve
Pour the mixture into a well-buttered dish and refrigerate until cold.
Alternatively, pour into small cups dipped in cold water and refrigerate for 1 hour before serving.

What each ingredient does
- Cornstarch
- Thickens the milk into a smooth, sliceable pudding as it cooks.
- Egg yolks
- Add richness and help set the pudding into a creamy custard.
- Milk
- Forms the liquid base that the cornstarch thickens into the pudding.
- Lemon juice
- Adds acidity and bright lemon flavour that balances the sugar.
- Sugar
- Sweetens the pudding and balances the sharpness of the lemon.
The step that matters
Stirring the cornstarch into the boiling milk. Cornstarch must be stirred constantly while boiling so it gelatinises evenly; otherwise it can form lumps or scorch on the bottom of the pan, leaving the pudding grainy.
