Royal Sago Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sago

  1. Combine washed sago and milk in a saucepan.

  2. Place in boiling water until sago swells.

Make the pudding

  1. While hot, stir in butter, sugar, and flavoring.

  2. Once cool, mix in beaten egg yolks.

  3. Pour mixture into a buttered pudding dish.

  4. Bake at 350°F (175°C) for 30 to 45 minutes until set, then cool.

Top and finish

  1. Beat egg whites with powdered sugar until frothy.

  2. Spread jam over the pudding, then top with frothy egg whites.

  3. Return to oven for 2 minutes to lightly brown topping.

What each ingredient does

Sago
Swells in hot liquid to form the pudding's soft, starchy body.
Milk
Provides the liquid that cooks the sago and forms the custard base.
Butter
Adds richness and a smooth mouthfeel to the pudding.
Egg yolks
Enrich and help set the pudding into a tender, custard-like texture.
Egg whites
Whipped into a frothy topping that bakes into a light, airy layer.
White sugar
Sweetens the pudding and helps tenderize its texture.

The step that matters

Baking until set. Egg yolks set as they heat, so the pudding must bake long enough to firm but not so long it curdles or turns rubbery. Check for a set centre before cooling.

Swap the raspberry

How well each one fits the dish's main ingredients (milk, butter, sugar, egg):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits about as well
  4. Raspberrythe original

Fit is the average pairing score against milk, butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
