Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Rub the butter and sugar together until creamy.

  3. Beat the egg yolks and whites separately.

  4. Mash the raspberries and combine with the beaten egg whites.

  5. Stir all ingredients together to form a smooth paste.

Assemble and bake

  1. Butter a pudding dish and cover the bottom with a layer of bread crumbs.

  2. Add a layer of the raspberry mixture, then continue alternating layers until the dish is full, finishing with crumbs on top.

  3. Bake for 1 hour.

  4. Serve in the baking dish with raspberry fruit sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set into a custard-like texture as it bakes.
Soft bread crumbs
Form the body of the pudding and soak up the liquid to hold its structure.
Butter
Adds richness and tenderness to the mixture.
Sugar
Adds sweetness and helps the butter cream into a smooth base.
Raspberry jam
Supplies sweetness, fruit flavour and moisture throughout the layers.

The step that matters

Stir all ingredients together to form a smooth paste. If the mixture is not evenly combined, the eggs can set unevenly and the crumbs may stay dry in pockets. A smooth, well-mixed paste helps the pudding bake to a uniform texture.
