Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a saucepan, combine pears, cloves, lemon or orange peel, and water. Stew for 15 minutes.

  2. Transfer the pears to a pudding dish.

  3. In a bowl, beat eggs and sugar together. Add flour and grated nutmeg.

  4. Gradually stir in the cream or milk while mixing continuously.

  5. Pour the custard over the pears and bake at 400°F (200°C) until set.

  6. Serve cold with sweetened cream.
