What each ingredient does

Molasses
Adds dark color, a deep flavor, and chewiness to the coating.
Sugar
Sweetens and, when boiled, sets into a firm candy that binds the corn.
Vinegar
Adds a little acidity that helps keep the boiled sugar syrup from crystallizing.
Popcorn
Forms the bulk of the ball, with its airy structure giving a light texture.

The step that matters

Boiling the candy mixture. The syrup must reach the hard-crack stage so it sets firm when cooled. Under-boiling leaves a sticky mass that will not hold its shape, while over-boiling can make it brittle or scorch the molasses.
