Curried Oysters

Ingredients

Directions

  1. In a saucepan, melt the butter and fry the sliced onion until golden, then strain out the onion.

  2. Add the flour and curry powder to the roux and cook for 3 minutes, stirring constantly.

  3. Gradually add the heated oyster liquor, stirring until you achieve a smooth, thin paste with an 'old-gold' color.

  4. Pour the curry sauce over broiled oysters arranged in a hot-water dish.

  5. Serve with boiled rice.
