Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Proteins set as they heat, firming the white while the yolk stays soft.
Heavy cream
Fat and water give the poaching liquid richness and a silky moisture.
Butter
Melting fat adds richness and flavour to the toast beneath the egg.

The step that matters

Timing the egg in the cream. Egg white sets as its proteins heat, so three minutes gives a firm white with a soft yolk. Cooking too briefly leaves the white runny, while cooking too long firms the yolk.
