Boiled Sweet Potatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Select sweet potatoes of uniform size.

  2. Wash the sweet potatoes.

  3. Boil in salted water until a fork pierces readily to the center of the largest potato.

  4. Drain the potatoes and set them in a 400°F (200°C) oven for five minutes to dry.

  5. Peel the potatoes and serve hot.
