What each ingredient does

Cauliflower
Forms the main body of the dish, cooking into a tender, mild-flavored base for the butter.
Drawn butter
Adds richness and fat, carrying flavor and moisture over the cooked cauliflower.
Vinegar
Added to the boiling water in small amount, mildly acidic to help keep the cauliflower looking white.

The step that matters

Boiling the cauliflower. Cook it until just tender and drain it well. Overcooking makes the florets soft and watery, and leftover water dilutes the butter and lemon sauce.
