Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Cook the onions in two waters, the second being salted and boiling, until tender.

  2. Drain the onions well, pressing each one gently in a coarse cloth to remove excess water.

  3. Place the dry onions side by side in a baking pan.

Bake and serve

  1. Season with salt, pepper, and butter, then add the stock.

  2. Bake in a 400°F (200°C) oven until browned.

  3. Remove the onions and keep them hot in a deep dish.

  4. Thicken the gravy left in the pan with browned flour.

  5. Pour the thickened gravy over the onions and return to the oven for 2 minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Become tender and sweet as they cook, forming the body of the dish.
Browned flour
Thickens the pan gravy so it coats the onions.
Butter
Adds richness and helps the onions brown in the oven.
Stock
Provides liquid that forms the gravy in the pan.

The step that matters

Drain and dry the onions well. Excess water left on the onions dilutes the gravy and stops them browning in the oven. Pressing them gently in a cloth removes this water so the surfaces can brown.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
