What each ingredient does

Salsify roots
Provide the main vegetable; boiling softens them so they can then brown in the butter.
Butter
Carries heat to the salsify and adds richness and browning in the pan.

The step that matters

Shake and toss for 3 minutes, ensuring the salsify does not burn. The pieces are already cooked and dry, so the pan only needs to brown their surfaces. Butter milk solids darken quickly at medium heat, so constant movement and a short time keep the butter from scorching while the outside browns.
