What each ingredient does

Potatoes
Provide the bulk and starchy body of the salad, holding their shape when sliced and cooled.
Oil
Adds fat and richness, coating the potatoes and carrying flavour through the salad.
Vinegar
Adds acidity that brightens the flavour and balances the richness of the oil.
Onion
Adds sharp aromatic flavour; scalding mellows its bite before it goes into the salad.
Beets
Add earthy sweetness and colour as an optional garnish around the potatoes.

The step that matters

Let the cooled potatoes sit after dressing. Potatoes absorb dressing best while still warm or cooling, so resting the salad lets the oil and vinegar penetrate and season the starch evenly rather than leaving it coated only on the surface.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (potato, garlic, onion, vinegar, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Dillfits better
  4. Clovethe original

Fit is the average pairing score against potato, garlic, onion, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
