Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and the juice that forms the base of the foam.
Sugar
Sweetens the foam and draws juice out of the berries while they sit.
Gelatine
Sets the liquid so the foam holds its shape when chilled.
Lemon
Adds acidity that brightens the strawberry flavour.
Whipped cream
Adds fat and air, giving the foam a light, creamy texture.

The step that matters

Fold in the whipped cream when the mixture is cool and thickening. If the gelatine mixture is still hot, it melts the cream and deflates the air that gives the foam its lightness. If it has already set, the cream will not blend smoothly and the foam will be lumpy.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
