Make the base

  1. Stir 2 cups of sugar into 1 quart of rich cream until dissolved.

  2. Pour the mixture into a patent freezer.

Churn and add lemon

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides fat and richness, giving the ice cream a smooth, creamy texture.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream soft and scoopable.
Lemon juice
Adds acidity and bright flavour that cut through the richness of the cream.
Lemon peel
Contributes aromatic oils that give concentrated lemon fragrance and flavour.

The step that matters

Adding the lemon juice and churning quickly. Acid from lemon juice can cause the cream to curdle and separate. Adding it once the mixture has partly thickened and churning promptly keeps the base smooth and evenly mixed.
