Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Provides the crisp, firm texture that remains after pickling.
Vinegar
Supplies the acidity that preserves and sharpens the pickle.
Sugar
Adds sweetness that balances the sharp acidity of the vinegar.

The step that matters

Boiling the cauliflower in brine for 3 minutes. Brief blanching partly softens the cauliflower while keeping it crisp. Longer boiling makes the florets soft and mushy, and they will not regain firmness once pickled.

Swap the mace

How well each one fits the dish's main ingredients (cauliflower, vinegar, sugar, celery, coriander, mustard, white pepper):

  1. Tarragonfits better
  2. Turmericfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against cauliflower, vinegar, sugar, celery, coriander, mustard, white pepper. Candidates are from the same food group and used in at least 100 recipes.
