Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Clam Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. If clams are very large, cut them in half.

  2. Boil clams in their own liquor in a saucepan, adding a little water if necessary.

  3. When the clams are cooked, cut the cold boiled potatoes into small pieces.

Assemble

  1. Line the sides of a baking dish with pie crust.

  2. Alternate layers of clams and potatoes, seasoning with salt, pepper, and butter, and sprinkling lightly with flour.

  3. Place an inverted teacup in the center of the dish, pushing the mixture aside.

  4. Pour the clam liquor over the layers and add a cup of water if it seems dry.

Bake

  1. Cover with pie crust, make incisions for steam to escape, and bake at 400°F (200°C) for 45 minutes to 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main filling and their briny liquor adds savory flavor to the pie.
Potatoes
Add bulk and a soft, starchy body that soaks up the clam liquor.
Flour
Lightly dusted between layers, it helps thicken the juices into a looser sauce.
Butter
Adds richness and fat, contributing flavor and a smoother mouthfeel to the filling.

The step that matters

Pour the clam liquor over the layers. Clams can dry out or toughen if overcooked, and the pie needs enough liquid to stay moist while baking. Adding the liquor and a little water if it seems dry keeps the filling tender and saucy.

Swap the potato

How well each one fits the dish's main ingredients (clam, pepper, butter, flour):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Shallotfits about as well
  4. Chivefits less well

Fit is the average pairing score against clam, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
