Ingredients

Directions

Cook the veal

  1. Place a small plate in the bottom of a pot to prevent the meat from burning.

  2. Add the veal pieces and pour in 2 quarts of water.

  3. Bring to a boil and cook for about 1.5 hours.

  4. Ensure there is enough water to cover the meat completely before adding the dumplings.

Add the dumplings and finish

  1. Make a biscuit dough with 1 quart of flour.

  2. Cover the pot closely and cook for at least 20 minutes.

  3. If desired, cook potatoes separately and mash them.

What each ingredient does

Marbled veal
Provides the main meat, whose fat and connective tissue soften and enrich the broth during simmering.
All-purpose flour
Forms the biscuit dough, giving the dumplings structure as gluten develops and they set in the liquid.

The step that matters

Keep the meat fully covered with water before adding the dumplings. If the liquid drops below the meat, the exposed surfaces dry out and toughen, and the dumplings cook unevenly in a shallow broth. Adding enough water first keeps the meat moist and gives the dumplings room to cook through.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (veal, flour):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Leekfits better
  4. Potatothe original

Fit is the average pairing score against veal, flour. Candidates are from the same food group and used in at least 100 recipes.
