Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Peel the potatoes and place them in a chopping bowl.

  2. Sprinkle flour over the potatoes, add salt, pepper, and butter, then chop fine and mix well.

  3. Grease a deep pie tin and spread the mixture in it.

Bake

  1. Cover the mixture with cream and bake at 300°F (150°C) for about an hour or until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the pudding, giving body and a soft, starchy texture when baked.
Flour
Absorbs moisture from the potatoes and helps the pudding hold together and set.
Butter
Adds richness and fat, contributing flavour and a tender texture.
Cream
Covers the mixture and adds moisture and richness as it bakes and sets.

The step that matters

Baking until set. Starch from the potatoes and flour thickens as it heats and proteins in the cream coagulate, so the pudding sets firm. Pulling it too early leaves it runny and loose in the centre.

Swap the potato

How well each one fits the dish's main ingredients (flour, pepper, butter, cream):

  1. Spinachfits about as well
