To Clean Tripe

Ingredients

Directions

  1. Rinse the tripe in cold water after emptying it, ensuring the contents do not touch the outside.

  2. Make a strong lye and pour it hot over the tripe; let it soak for 3 hours.

  3. Fasten the tripe to a board with tacks and scrape the inner skin off with a knife.

  4. Sprinkle with lime, cover with warm water, and soak for 2 hours; scrape again.

  5. If the dark comes off, it is clean; if not, repeat sprinkling with lime and soaking.

  6. Once clean, cover with salt water and soak for 3 days, adding clear brine each day.

  7. Cut the tripe into 6-inch squares, soak in buttermilk for ½ day, rinse, and boil in clear water until very tender.
