Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Fill jars with peaches and sugar, leaving room for two more peaches and juice.

  3. Fill a pitcher with the same proportion of peaches and sugar, and place it in the oven with the jars.

  4. Fill the hot jars to overflowing and screw the covers on tightly.

  5. Store the jars in a cool place.

  6. If there is undissolved sugar, lay the jar on its side for a few days or add 1 tablespoon of water before filling.

  7. Place a perforated shelf in the oven and a large meat pan to hold the jars.

  8. Cook the jars for 2 hours, but they can remain for up to 4 hours without injury.

  9. Add vinegar and a muslin bag of spices to each jar for flavor.
