Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Dissolve the yeast in lukewarm water.

  2. In a bowl, mix lard, mashed potatoes, sugar, and salt.

  3. Add the beaten eggs and milk to the mixture.

  4. Stir in the dissolved yeast.

  5. Gradually add about 4 cups of flour to form a soft dough.

  6. Cover and let rise for 2 hours.

Shape and bake

  1. Shape the dough into rolls or a loaf and place on a baking sheet.

  2. Cover and let rise again.

  3. Preheat the oven to 400°F (200°C) and bake until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the gluten network that gives the dough its structure and chew.
Mashed potatoes
Adds moisture and starch, keeping the rolls soft and tender.
Lard
Adds fat that tenderizes the crumb and softens the texture.
Eggs
Add structure and richness, helping the rolls hold together and brown.
Yeast
Produces gas during rising, leavening the dough so it becomes light.
Sugar
Feeds the yeast and adds sweetness and golden browning in the oven.

The step that matters

Gradually add the flour to form a soft dough. Adding too much flour at once or too quickly makes the dough stiff and dense. A soft, slightly sticky dough gives a moister, lighter roll once the gluten has developed and the yeast has risen.

Swap the potato

How well each one fits the dish's main ingredients (flour, milk, egg, sugar):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
