What each ingredient does

Fat
Carries the flour and browns it, forming a roux that thickens the gravy.
Flour
Thickens the liquid as its starch swells when cooked in the hot fat.
Stock
Provides the liquid base that the roux thickens into gravy.
Giblets
Add meaty flavour and texture to the finished gravy.

The step that matters

Gradually pour in the stock. Adding liquid slowly while whisking keeps the flour and fat smooth, preventing lumps as the starch hydrates evenly.
