Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash, peel, and remove the stems from the mushrooms.

  2. Sauté the mushrooms in butter until cooked.

  3. Place the cooked mushrooms in a buttered pan.

  4. Top each mushroom with an oyster, and sprinkle with salt and pepper.

  5. Add a small piece of butter on top of each oyster.

  6. Bake in a hot oven at 400°F (200°C) until the oysters are plump.

  7. Serve with drawn butter sauce.
