Banbury Tarts

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Stone and chop the raisins.

  2. In a bowl, combine the chopped raisins, sugar, beaten egg, rolled cracker, and lemon juice and rind.

Shape and bake

  1. Roll out pastry to ⅛ inch thick and cut into pieces measuring 3.5 inches long by 3 inches wide.

  2. Place 2 teaspoons of the mixture on each pastry piece.

  3. Moisten the edges with cold water halfway around, fold over, and press the edges together with a fork dipped in flour.

  4. Bake for 20 minutes in a cool oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Provide chewy texture and natural sweetness that fill the tart.
Egg
Binds the filling so it holds together when baked.
Sugar
Adds sweetness and helps the filling brown and set as it bakes.
Cracker
Thickens the filling and absorbs moisture from the mixture.

The step that matters

Sealing the pastry edges. Moistening the edges and pressing them firmly with a floured fork bonds the dough so the filling stays inside during baking instead of leaking out.
